Far away from city life, idyllic scenes provide the backdrop to a declining population. Historic businesses like Kubota Shuzo are striving to preserve the countryside. The artisans at Kubota are like a family, and for them sake brewing, or “sakezukuri”, is done according to long-held tradition. It is a service to the land where the ingredients come from, to the local community, and for the greater good. This is an inside look at the people who are striving to preserve the age-old tradition of sakezukuri in Fukui’s rural countryside.
